It’s a more behind the scenes look at the dishes that made the restaurant famous, laying out the components of each dish. There’s a certain assumption inherent in it that the reader is familiar with molecular cooking techniques and has access to various potions and powders and equipment for making some pretty sophisticated parts of dishes. The products, the seasons, the land and the sea form the foundations of his cuisine, which he observes with the eyes of a child, with innocence.

There are no tips or tricks as there were in the first volume arzsk someone who isn’t already up to speed, and in fact, the book jacket basically states – look it up on the internet if you’re not familiar with how to do these things. This book is not yet featured on Listopia. An example is the freeze-drying technique used in the preparation of traditional fish recipes to enhance flavors.
